Master Kuo G1000 Butchering & Taiwan Tuna Knife is used to cut through the fish’s spine when cutting steaks. It can also be used for cutting pork and beef when doing some serious BBQ. It’s a stainless steel clad version of the FN Big 1000, which is a supersized G-4. This G-1000 is made with 3 layered laminated steel. The outer steel is stainless while the inner core steel is a traditional Japanese High Carbon SK5 steel, and has a RC hardness of 60-61.
