Master Kuo G5 3XL Butchering & Taiwan Tuna Knife

The Master Kuo G5 3XL Taiwan Tuna Knife is designed for cutting the heads off of large fish, and for cutting the body into steaks. It is used by pushing the heel of the blade into the fish and then rolling the blade forward to finish the cut. The curved blade can also make long lateral slices. This blade is made with 3 layered laminated steel. The outer steel is stainless while the inner core steel is a traditional Japanese High Carbon SK5 steel, and has a RC hardness of 60-61. Stainless clad outer steel will not rust, but exposed SK5 core edge steel can show signs of surface rust over time.
