Master Kuo G-3 Mini is like a precision scapel that can cut around bones and easily gut small fish. It is quick and nimble butchering and boning knife. This G3 fish knife is made with 3 layered laminated steel. The outer steel is stainless while the inner core steel is a traditional Japanese High Carbon SK5 steel, and has a RC hardness of 60-61. Knife care instructions: Keep clean with warm water and soap. Towel dry immediately and store dry. Do not put into dishwasher. Stainless clad outer steel will not rust, but exposed SK5 core edge steel can show signs of surface rust over time. Most surface rust can be removed by sharpening the edge.
